Dear Japan. Basically every country that borders a lake or sea has some variation on "Raw Fish/Meat + Binding Agent + Slight Curing Liquid/Solid". Sashimi is nice but largely unremarkable as a food in the context of world cooking. Sincerely The Rest of the World
