I'm not sure what kind of katanuki you've seen, but it's done using a candy mold, not cardboard. It wouldn't exactly be as much of a challenge if it was done with cardboard, since you wouldn't have the brittle nature that the candy does to possibly mess up the form when cutting it out.

Agree with @MC_Gigglepants about page 13. Either you didn't realize you included the wrong page (though why it was done in the first place I'm not sure) or for some reason decided that was the only page you didn't want to clean out the original text, but it made it harder to read.
