Ippon literally means "one (full) point". That said, in Judo (and, I believe, Karate and a few other martial arts) where the terminology originates, an Ippon is a decisive victory- the equivalent of winning by KO rather than by decision. In MMA, tapping someone out is considered an "Ippon" win, regardless of the submission used.
