So I can guess the gist of what he would want that spoiling earth for, but what is that soup specifically?
(Also if it had occurred to me to use it for food, I would have assumed alcohol)

Cursed earth accelerates decay. Decay, when managed by bacterial breakdown results in fermentation (technically only certain types of bacteria can do so safely for human consumption). Lots of korean food is based on fermenting/pickling vegetables and beans. He probably wants to make doenjang jiggae which is fermented soy bean soup, a type of miso soup, but the korean version.

@Kardelune Jjigae is a kind of soup. Generally, it's made with kimchi, commonly cabbage pickled in vinegar, chili powder, and other choice seasonings. Considering the process for pickling, he's probably thinking to use the decay soil to essentially skip the waiting time... no idea as to how he is going to accomplish this while ensuring nothing else decays though.
