As someone who trained himself to be ambidextrous, I unironically don't understand why left handed people don't just do this.

Correction: He used to be left-handed. He isn't anymore, not after wearing that gauntlet for the first time.
 
This is epic on so many levels. There are way too few fantasy settings, where they even need to fit the clothes or not just go by one size fits all.

Being left handed in a right handed world we have to be ambidextrous for most things, but to actually use our dominate hand is the most comfortable and easiest. Furthermore being in such a life threatening field like an adventure I’d imagine you wouldn’t want to chance it.

Driving, being able to use my left foot would be heavenly. One thing being left handed has that always puts a smile on my face, when eating technically the correct way is fork on left and knife on right. I have only seen a handful of right handed actually put in the work to learn. So many give up for the more comfortable fork on right, being left handed means having to put in that work for almost everything in life.

I've never seen anyone use their fork in their right hand, be they left or right handed. Exception being when you only have a fork, for tasting or picking meatballs off a plate at a party for instance.
