I like to add some milk to get a smooth texture and a dash or two of nutmeg.
I ate some hand- mashed mashed potatoes at a food-court once. Strangely enough, they offered to add some finely cut pickled gherkin - for free!
You'd think "Urgh!", right? But it actually tasted really good when I mixed it into the mashed potatoes!
