How do yo make mash potatoes taste good?

I like to add some milk to get a smooth texture and a dash or two of nutmeg.

I ate some hand- mashed mashed potatoes at a food-court once. Strangely enough, they offered to add some finely cut pickled gherkin - for free!
You'd think "Urgh!", right? But it actually tasted really good when I mixed it into the mashed potatoes!

Want some damn good mashed potatoes? Add Parmesan cheese to them, both in the potatoes, and later on top. Add a couple of pieces of butter and put that under the broiler until the cheese melts and turns golden. That is the secret to delicious mashed taters.

Also, DO NOT use that powdered shit they call Parm in the USA. Use shredded Parm. The powdered one will NOT melt well.
