I mean yeah, the person who defeats her would be the new king.
That said, Rin does have some holy powers that is really scary to demons.
Not to mention her dad would murder anybody who challenged her, so in reality, you would need to fight him aswell.

I have to admit, that it might have been a good growth experience for her to run a demon nation all on her own. The, kick the child into the deep end parenting style. Anyways, any future time skip should see the new demon king totally dead. Still, the story isn't half bad given I figured the whole thing would only be slice of life.
