Instead of having to choose a Demographic, why can't we just exclude what we don't want?

I enjoy both Shounen and Seinen, don't want Shoujo or Josei, I should be able to just exclude those two.

Those too would be tags. Tags are divided into subclasses. You seem to be seeking to have the demographic tags included amongst those that appear in available exclusion settings. I'm a bit surprised that they aren't already included.
