I guess Earl of Sandwich made it only popular. But the idea of placing something between or on top of a slice of bread was known much earlier. At least for the poor people.
And using pork for Schnitzel is just an imitation, or let's say a cheaper version. The Viennese Schnitzel must be made of veal, not other meat.
