why are they so afraid that the humans will destroy the bridge? i'm surprised you haven't destroyed it seeing as you want everyone to be able to live in peace and no one wants to willingly, let each race live on their own island in peace there's on need to connect them all.

A destroyed bridge wouldn't really stop an invasion. An invading force - whether it be the humans or the demons - could just cross by ships and then build another bridge. I don't recall the geography, but I assume that there would be plenty of other ways to travel between the human and demon territories besides this one bridge.
On the other hand, the dialog here suggests that the bridge is the demon's only immediate way of retreating in case they get betrayed at the conference. I assume that they have to take a longer way around through human territory. Rescue/reinforcements will also have to find another way to them. iirc, there are some demons who disagree with their leader and the peace talks. So these demons are conspiring with humans to get rid of their leader and start another war.

Demon queen genuinely wants to make peace with humans, so she wants to hold peace meeting. But the human king and his minister distrust her, and think she is trying to entrap them like her evil brother did in the last war. Now they want to "return the favour", by using the heroes to hit back at the queen in a pre-emptive strike. Meanwhile they've also managed to get some demons to back them like the bridgekeeper, because they're opposed to queen's pacifist ideas. Also king has some mysterious new ally who the demon spy at the end recognizes.
