Well, maybe he should open up to her. Asking her to understand his point of view without explaining anything... asking her to pretty much change her whole world view instantly...

I dunno, maybe he should try to find connections with her instead of trying to win her over with food.
Something clearly happened with the Knights, he still doesn't know what happened to her father and he doesn't really understand her motivations.

Imagine if her father actually died during the human/demon conflict. She would be asked to accept the ultimate enemy of humanity, the leader who killed her father, as her new dad.
 
Guessing her dad was a knight or was killed due to something involved with the knights

It's true that in chapter one, her mom explains that the father died of a disease, but the next line makes it even more strange...

the "after that, she wanted to become stronger"... why the hell would she want to become stronger like that if her father just succumbed to a malady.
You don't become this obsessed to commit genocide just because your father died of natural causes...

If she really just wanted to stop being a burden on her mother, there's tons of other ways to do it.
Certainly better ways than go fight the strongest being in the world. I don't know about her mom specifically, but most mothers would feel much more burdened from asking herself if their kid will come back alive...
 
@aFFi a household composed entirely of women is likely to get bullied/ridiculed even in our more "modern" society let alone the world they live in. Being physically strong would deter would be bullies. Ill also assume that the culture is similar to medieval Europe (I would say a pretty safe assumption considering manga fantasy tropes). A young women likely had less work opportunities limiting the jobs she can take to support the family. Also, might is right. Being physically strong can greatly improve your status and garner respect. This is where I think she has an issue with the knights. Likely due to sexism, she was scorned by the knights either for trying to become an adventurer as a women or being stronger than them as a women.

I am not saying that your guess is wrong, but I am just providing another explanation. This is, of course, all under the assumption that the author bothered to think about this at all so the answer could just be totally BS anyways.
