I think his response to her "You're simple and easy to read" was to see what she would do if he waited for a kiss. She got confused, thus proving that he was right in a way, he wasn't as simple as she thought.

Pretty sure he wasn’t waiting for a kiss. She said he was easy to read, so he was trying to see if she could tell that he likes her by his facial expression. She didn’t get it, so that’s why he called her a liar, because she said he was easy to read yet she couldn’t tell.
