Mill might be up your alley. Granny-cat girl romance. There's also Otome Youkai Zakuro, not technically a romance but leans pretty heavily into it. Don't think it had a love triangle, but it's been a long time since I've read it.

Kemono Jihen is an action manga, but has a very sweet kitsune romantic subplot. Not really close to your request, but I'd rec it regardless.

It has that rival quite early and since he stays a human and she has a way greater lifespan, it suggested that Lawrence was not that meaningful to her, its just another of her list of partners that she had and will prob continue after Lawrence... Meh.. She is basically growing her harem over time,

not that wholesome to me. Very unfortunate because at the same time, the core story looks great so that's why I haven't yet remove it from my PTR. I guess it's on a personal hiatus :)

She just can transform into a cat, that's it. Not really what I was looking for.

If those suggestions don't work for you there's Urami Koi, but I've just started it; can't say if there's gonna be a proper love polygon or not yet, but kemonomimi ahoy. Otherwise, if you're willing to make the jump to kemono altogether, I can vouch for Pandemonium. The birdfox woman is cute in it.

Kitsune Spirit is pretty good, it swaps between shounen battle manga and fluffy romance intermittently, but the fluff makes up for the rest of it if you're not too into the action portions.

It focus on our two MC and the way they do the romance dynamic is pretty unique as well.

@OsseinMarrow Yeah, I know, I put Kitsune on my examples on my post. We never saw how they fell in love, it just got skipped to married life, but its still has some fluffy moments.
