In what world does deep frying stuff in animal fat makes your stomach hurt? Like really. Duck fat, tallow and lard are all equally awesome.
 
Because people use old fat, heat it too much so it gets bad, or use not enough heat so the food becomes a grease bomb, or some fat contains compounds some people do not agree with... or all of the above...

Deep frying is as much as an art as properly using a BBQ is. And neither is as easy as it looks.
