I feel like the other places she briefly mentioned probably have something to do with that. Like, maybe this point card is affiliated with other steak places as well.
 
Standing room only steak sounds awful. Who wants to try and savor a steak while standing?
 
Like Agari (kinda) says, the benefit of a standing place to the restaurant is that they get quicker turnover, and can focus on cooking and serving food quickly instead of the usual division between kitchen and waitstaff. The benefit to the customer is you get quicker service, you get cheaper food, and that focus (hopefully) gets you better food.

As to the card, the implication is that the restaurant is part of a chain; Agari has only been to this location once before, since it only opened recently, but she's been to other Suddenly!! Steak places before.
 
1.) Standing while eating is rarely enjoyable. Let alone with a fucking steak. I don't care if it's delicious or cheap. I'll walk in there with a fucking container, plop it in and walk out and sit down and enjoy it.
2.) 200 grams is PRE-COOKING and is only about 7 ounces. Even for non-glutton high school girl, that's not very much. Especially when you consider that might be 5-6 ounces after cooking. I dunno, if I'm craving a steak, I'm not going to take modest approach and I doubt I'm alone. Then again I'm someone that's always wanted to do one of those insane ~70oz steak challenges where you don't have to pay if you finish within the time limit or whatever because I'm sure I could do it.
 
7oz top sirloin is my go-to at a good steak place near where I live. Paired with a baked potato, that's a filling meal without feel like a total glutton. Plus, it's also not the hardest steak to trim any gristle from.

But, best steak place I've ever been to, gotta go with a 10-12oz ribeye.

I don't know that I've ever had a 16-18oz steak like Agari is having.
