kind of annoy me that the nobles are such caricatures, would have been nice if they were more subdued and acted "noble" for the most part, while thinking all these things and sabotaging that way, now they are about as threatening as children with temper tantrums, villains that can keep a mask are always better then brutes.

Historically, that's the way it was though. The "noble" attitude of nobles was generally restricted to their peers or those of higher status than them. It's there where notions of subterfuge would be placed. For peasants or serfs, they were completely violent and indignant. A knights chivalry applied only to nobility. They would pillage villages, sometimes their own but mostly this was the way knights fought each other by killing the other's serfs, and would still be labeled chivalrous. As long as a story is about conflicts between nobles and commoners, the nobles would be one-dimensionally evil. It's the result of having a class built and raised on the notion of being inherently superior to the other, on the notion that the other is sub-human. To write nobles who treated commoners as people as anything more than a rarity would be a fantasy or white-washing.
