Regarding what happened, that is probably why Ellen wants to find a way to sleep forever, since she doesn't want to kill people in order to release her immortality.
And Caidel.... I am sure he will be shaken up once again but pretend he is ok like before. I am not sure how much will he be able to take until this cup will actually crack. I don't blame him entirely, it does feel hard to have to bear all of her past.

Also, I think I was right and Ellen will not use that memory alteration move again even if she had to gouge her eyes out. The consequences were shown to be impossibly heavy for her.

well she now has access to combat training and the like so couldn't she just become a soldier or something? if she dies, great she got what she wanted. if she doesn't she kills people and gets closer to her desired goal. the country or people she's affiliated with get an immortal soldier and she gets closer to her goal it's a pretty win/win situation if she'd ever think of this route.
