I was disappointed that we didn't actually get to see Tomo's father although I suppose you never see any of their actual parents (dream cats calling themselves someone's "father" don't count).

Yes, in episode 8 of the anime, you did briefly see Kaorin's mother after her New Year's Dream about Sakaki but that was an anime-original segment.
