Now here is my best understanding about kopi luwak (am indonesian) ,take it with grain salt for sure.

Civet translate to luwak in indonesian/melayu,and they do consume coffee fruit but leave undigested bean in their feces which ppl collected,hence the name "kopi luwak"

But there is something not many ppl know, coffee (fruit) is not main/staple for them,atleast not according to farmer that i visited last time. They prefer banana actually according to him.
So forcing them to only eating coffee (which happen in most "kopi luwak" farm) is kinda ...
Sure they can(and will eat it) but

Its akin to forcing west european people to kept eat rice or bread to asian people


Now this is what i see in that civet "uneagerness" yet still doing it with reasoning it for his minion.

@Kirin-kun or you know just pureblood obsession, which to be honest isnt the worst thing in that world. besides unlike humans there are major drawbacks for some half-breeds like melon.
