I feel like the African guy is going to lose this one, which makes me sad. He seems like a great guy. I just hope that he doesn't end up crippled or dead and gets to go back home.

Really? I'm absolutely certain mutanga will win, because:
1. he hunted wild beasts his entire life. criminal is clearly a wild beast.
2. criminal had no combat training at all. mutanga was probably partially trained by his dad.
3. mutanga's employer seems pretty intelligent, comparable to cestvs' owner. and he actually specifically went to a different country to recruit him
4. zafar's master thinks criminal will lose (chapter 50)
5. mutanga is more focused on winning, but criminal is thinking 'I'll kill every last one of them'
6. mutanga is one of the elite boxers who spoke in chapter 16, the one who didn't speak are fodder
I think Red Beard, since he swore to kill Cestvs in a fight. Makes it more personal and dramatic from a narrative po.v., and can be used to build up Red Beard as an antagonist. Mutanga seems a bit like a dead end.

If your defining fodder by people who lost in the first round your contradicting yourself because iota who lost to cestvs in the first round spoke in that very same chapter
fodder is generally used to describe minor characters whose will lose quickly/badly to really strong fighters. fodders' fights are generally to hype up their opponent as someone really strong.
cestvs is the MC so he'll probably win or at least get to the final fight regardless if he is against fodder/non-fodder
after re-reading that chapter, I realized I forgot to mention something else: the fighters who aren't in that chapter aren't 'elite' so they'll definitely lose to any of the elites in the chapter.

red beard is a criminal so the possible fight is probably not going to happen as part of the competition. I recommend you read kengan asura.
@boldmonkey plus they are writing Red Beard as the perfect despicable foe to root against, his first opponent is a good guy with noble goals that is fighting in order to improve the quality of life of his village, if Red Beard wins here we have one more reason to hate him and wish for Cestvs to defeat him in battle, that way it is a personal conflict for both the readers and the characters involved.
Wit that said Red Beard has no business winning this fight other than plot armor and plot progression and that sucks so damn much and feels so damn cheap!
