the demon wants to eat your personality is just your assumption, so far it is only said that they want to eat unique desires and the rewards, being a dungeon lord literally let you control a dungeon of gold

the critical desire for food and water, for life is pretty basic and is definitely not unique, theres no particular reason why you would die from it, what happened to the captain is just the demon getting greedy and eat the non-unique very mundane desires from him, which is not sustainable

in the real world, if given an offer to trade your kinkiest desires in exchange for just 2 months living the life of a billionaire, i am willing to bet more than a few people will take up that offer

in any case, very few humans can be accused of having too little desires, thats plenty of eat
