Now that Kabru mentioned how Canaries hire former practitioners of dark arts, it's safe to assume that at least some of the elves are former convicts.
If you look at the picture with the elves on casual winter outfits, everyone except the captain and the cleric have cut ears.

In other news, I love the detail that the recipe calls for making each patty the size of the palm of your hand and everybody has a different, appropriately-sized patty.
