Salt, really? Why not just pull out the biggest stone block you have access to? It would have exploded the griffon's head.

@Doomer that's what he was going to do, but by accident he took out salt bricks instead of dirt bricks

Because the thing's much larger than him, denser, has armor-like fluffy feathers, all of which helps cushion and spread out blunt force trauma, meaning you have to be THAT much stronger to kill it with a good hit of a hammer. A piercing weapon requires less strength to push it through permeable objects and flesh/bone. But still more than he had, sadly.
