Well it is a manga so even the people that are "ugly" are still cute, unless they go out their way to make them really disgusting.
So she may be actually not as cute as we see her based on the standards of the story reality.
@TreeU it's a rule of fiction that every (female) character is drawn/casted as attractive, even if in the story they are ugly potatoes (with obvious exceptions for archetypes such as "the ugly witch", "the fat stepmother/noblewoman who harrass mc" and so on). You have to extrapolate how they actually look from convo. Which means that this girl who has never been sent marriage proposals, was ignored and made into a wallflower at the balls, admits herself that she is not particularly outstanding or attractive, and is called potato by that guy, is actually quite average and dull-looking at best despite being drawn pretty.
When she visited the Knight's hall to meet the Prince, the supervisor said she was "a cutie". So "potato" is sour grapes, methinks. And when Lumis met her originally, he also said she was cute, which Aurora accepted even though she had refused the overly flattering description of the rumors going around.
