I dont't think there is anything wrong with it, especially if it reduces waste because people eat more parts of the same animal.
If you are ever offered try Liver Kebabs roasted on an open fire or liver panckaes/fritters (? idk what this dish will be called in english) . It takes more effort to prepare offal meat correctly and I agree that some of it is not pleasant, mixes like that are usually limited to livers, stomachs (If chicken) and hearts as they are the easiest to prepare.
@TheDollCollector I have eaten liver, heart, and tongue. If blood is considered offal as well, then it might be the one I don't find particularly unpleasant in certain dishes. I guess roe could be considered one as well? I don't know. In any case, I could live without all of it. I have nothing against other people enjoying it.

I wonder if the brain counts? A friend of mine recently had a discussion on the topic and their father had to refuse monkey brains that wee presented to him. I just think there are things much worse out there than offal.
Plus they had seafood so it looks like a fun backyard party
@TheDollCollector Nobody should eat brains, no matter what anyone says. It's not worth it, risking the Creutzfeldt–Jakob disease. Not counting zombies, of course. They haven't got a choice, they just need to eat brains.
