if sake just means alcohol why not translate the word

It's like differentiating between wine and alcohol.

no because sake is a loanword in english that means rice wine, but that rice wine is nihonshu in japanese, so that can't be it. the mystery deepens

At the time I felt like going with "sake" was a good choice but I should've just went with alcohol
