They're not really going to escape, Ella's goal is to earn the right to become a nun and get the audience with the leader in three years. The main reason they're going out into the forest is to get some food that's not drugged.

Adding future tech (steam power) seems really unnecessary to tell this story, guess we'll see how that turns out

edit: Thought the story was in an earlier era but checking it out it turns out steam power isn't out of place, neato
