I admire the mangaka for keeping the languages and cultures alien and confusing to the readers, while still being consistent to the lore and backing all of it up with discernible logic.

This manga never fails to be fascinating. Reminds me a bit of Tolkien, because both authors put a lot of work on their languages.

Goblins can look like humans now?

We haven't seen any goblins yet, I think, but maybe "goblin" is a term for people whose species is unknown/mixed, so they don't identify with a particular group. Suzuki is a hybrid, but she lives with werewolves and considers herself one of them, so she wouldn't call herself a goblin, while none of the other three species claim the old "goblin" as one of their own.

I feel like goblin is a "brute" or something, someone who can't be understood or can't use the common monster language.

Same case as the WOOF that they eat, might also explain why the werewolf and the lizard seem to kill the goblin and have their spoils of war, because they simply can't communicate and shows aggression (shown by their spoil of war being a sword and skull)
