you're jumping to conclusions too soon:
1. as a knight, she's enforcing her kingdom's laws, she might not have anything against demi-humans personally
2. her kingdom might have legit reasons for forbidding demi-humans- for example, a lot of demi-humans could have been enemies during the previous war

Around here, we call that racism. You don't unilaterally declare an entire race to be enemy combatants. If you're an agent of the state enforcing racist laws, that doesn't make you any less racist. "I was just following orders" was not, is not, and will never be an excuse.

this is extremely unlikely based on what we've seen so far. knight didn't declare kohaku to be an enemy combatant - if she did, she would have tried to kill/capture kohaku instantly instead of giving them a chance to leave. demi-humans not being able to enter may have been common knowledge around the area, so kohaku saying she doesn't know it does seem suspicious. knight also stated she was going to hold kotaku in prison 'until there are further instructions' meaning it's fully possible they would have released her once they're sure she's not an enemy spy or something.

If you're an agent of the state enforcing racist laws, that doesn't make you any less racist.

this is ridiculous nonsense, because most people don't agree with all of their country's laws.
laws are enforced to maintain overall order (though some laws , especially older ones - like this medieval fantasy manga potrays, do more harm than good) and enforcers do it because it's their job- they may need to earn a living/feed their families.

@cgr The international legal convention established in Nuremberg after WW2 determines that ANY state apparatus and persons of that apparatus involved in the enforcement of laws of a state that clearly discriminate against or cause direct harm to groups of people living in that state is directly culpable regardless of position in the hierarchy of the state. This culpability may not be enforceable within the boundaries of the state but may be enforced within the international court of justice. So in the real world and based on our understanding of legality and morality, someone enforcing racist laws is as guilty of racism as the authors of that law. In Nuremberg terms, if you work for the Nazis you're as guilty as the Nazis. This is the norm of our real world. @iridisss is perfectly correct on that front. I mean, this was the basis for imprisoning and executing Baath Party secretaries after the Second Gulf War. In many cases their guilt was simply passing paperwork related to the Kurdish suppression by Saddam between the two Gulf Wars.

Anyway, this is the Helck universe and Kohaku is a Shitenno of the Empire, so a simpler explanation for the anti-demi-human laws exists. Just like it was to the human kingdom in Helck, demi-humans would belong to the "demon" civilization. Also, while we haven't seen the warrior class of the Empire so far other than Kohaku, presumably this human civilization has also had contact with them. The humans don't want demis around because to humans they're literally demons.
