Preferably fantasy based, but I'd appreciate it if anyone could recommend me manga where the MC adopts a child. Doesn't have to be the primary focus so long as it happens.

If you're fine with the "Badass/Monster and his loli" subgenre, there's plenty to choose from. Outright father-daughter/adoption stuff is less common, though. Anyway, here's off the top of my head a few fantasy-oriented ones you might like.

I don't remember if any fantasy manga adopts a boy, I know in Spirited Away by the Rain Woman Youkai, she adopts a boy but that's like supernatural family more than fantasy.
