isn't hon a counter in japanese? ippon, nihon, sanbon and so on.. so isn't the title kinda weird? you can say "One more!" since it means it.

the title of this series refers to 'ippon!' that was serialised in the same magazine. the author of 'Ippon' died a few weeks before this series started and the name 'Ippon' Again or Mou ippon is a homage.

Plus it also serves to show how Sonoda MIchi returned to Judo again after leaving it behind her, though i am sure its name is mostly for the first reason.
