wait, if they have Liquor, wouldn't yeast and fermentation process be common knowledge at least for a cook?
 
It’s kinda surprising she’s going with the yeast from the fruits, rather than from the wheat itself like sourdough starter.
 
this is where she is wrong. Baking bread especially is really influenced by the environment humidity and temperature, thus doing it strictly buy measurements and do not adjust will actually do the opposite.
 
I think she's emphasizing using measurements in general to keep things uniform.
She did say to "use flour to regulate the softness", so she's probably not ignoring the fact that adjustments will often be needed.
