i have had one (1) eggplant dish and that was the deep fried eggplant my mom made after i kept bugging her

then i almost fucking died

and thats how we figured out i was super allergic to eggplants

I've never tried eggplant before; it always offput me as a kid since it looked like some strange purple vegetable.
I gotta grow up and try it some day.
 
i never like boiled, steamed, or any kind of "wet" eggplant dishes, but stir fried and tempura eggplant is absolutely delish

it's genuinely very good and i'm a whole ass adult who dislikes most vegetables!! i'd recommend eggplant tempura if you like crunchy dishes :)
 
I used to hate eggplants until I ate some eggplant agebitashi in a Japanese restaurant. My reaction was pretty much like how the manga portrays the feeling of discovering something amazing with your taste buds lol. The flavour, texture, delightful smell, and lightness of it just makes it so irresistible and ever since then I started to cook more eggplants. Grilled, baked, tempura, stir-fry... Just so good and the deep purple colour is so attractive. Makes me respect veggies more. I realised I didn't like eggplant because my family tends to overcook it (the way they prefer). Now I'm even growing mini eggplants in a big pot!
 
Tbf, I used to dislike eggplants until I tried ratatouille. Not a japanese dish, but it got me to eat every vegetable I used to dislike.
 
Simple stir frying eggplant is already delicious for me....
