Why make the slaves the cavalry?
He has some 300-odd soldiers he can train to do just fine. Why in the world would you want to hand a ton of horses and riding weapons to a bunch of slaves with no allegiance to you?

Generally, yes. If you note throughout history there's plenty of records of using peasants or slaves as foot soldiers, but never as cavalry. It's a huge investment equipment and training-wise, so why would you want the worst soldiers (who can betray you at a moment's notice) over loyal soldiers who have ties to the land?
I expect this plan to backfire spectacularly once they start combat.

They are probably intended to light cavalry. While heavy cavalries were universally elite units, a fair number of light cavalries were slaves/mercenaries. The Romans famously employed these to great effect for nearly a century until their overreliance on foreign mercenaries of all stripes as well as internal strife and corruption brought about the fall of the Western Roman Empire at the hands of the marauders from those and other tribes/peoples.

They are Germanis slaves which are a tribe said to be fairly naturally adept at horsemanship. It would take longer to train Aldenians that don't have much of a cavalry culture comparatively. I don't know if that was explained in the manga when Ria first showed up, but it was in the WN and reiterated both here and when the slaves were purchased.
Slave units are not that bad of a choice if handled properly, of which method Almus is aware of and has instructed Rosewood.

I'm pretty sure he's doing that on purpose to test their new master's tolerance and limits early on to see where they stand and what treatment they can expect.

I've never heard of Roman cav being made up of slaves. Of course they were nearly always from conquered nations, but they were still free men.
It's a moot point though since slaves have often been given very important roles both in armies and in government like the Janissaries.
And I think that, while the are named after the Germannii, I think that was since Germans are well known and he could get the blonde hair color that way. I think the actual horseriding skill is based on the steppe nations instead, who were much better at horse riding than the Northern Barbarians. A place like Sarmatia or similar. Especially given that all the nations have exhibited a Greek-style culture. That existed in Italy, but it was spread all the way to India as well and, given other cultural signs, it's likely this story is based on the eastern part of the mediterranean rather than the western. And those steppe nations were right above the eastern Greek empires unlike the Germannii which were on the other side of the known world.

I'm sorry I wasn't clear when I said that the Romans made use of "light cavalries" of "slaves/mercenaries." The Persian empires are probably the best place to look for slaves cavalries being used, but I don't have any concrete examples.

No, there will be another group introduced, later on, that's the equivalent of the steppe tribes. Hell, they are even semi-nomadic.
The Germanis people are meant to be Northern Gallic and/or Southern Germanic people who were decent horsemen, but not the best. If you are looking for an example of Gallic/"Germanic*" cavalry, look no further than Caesar's on "Germanic*" Cavalry.
