Why would people leave SWORDS inside carcasses? Even arrows left in a carcass are a waste, you could at least reclaim the arrow head. But whole swords would be darn expensive to just leave.
I could see them leaving the carcasses if they did too much damage it would not be worth dressing.

Just think of it as the authors way of depicting it. It leaves a deeper impression then simply a few lifeless animals.
You are right though. Ignoring the arrows, a sword is too big to bother carrying around if you are just gonna ditch it. And thats assuming they are wealthy enough to ignore. Even a cheap sword should be pretty expensive in a world like that.

And I've said this lots but I don't give a single fuck about realism or comparison to myself. This is a fantasy it's not supposed to be realistic, it's supposed to be entertaining. I can't get any entertainment from an old guy pissing himself cuz he threw hands.

@Raudhbjorn He's influenced by his emotions. I agree that the girl was a target far before he showed up to town. However, he feels responsible even though he's not to blame. There are people like that in the real world too. People who's take the blame for themselves AND people who'd push the blame onto everyone BUT themselves.
