Basically, the demon king attacks Kumo with attacks that don't rely on the system, so if she actually lost all her HP, she would've died fr (immortality is only within the system so the top dogs like the demon king can easily kill Kumoko). What she does in the novels is actually use magic to transfer her soul into an emergency body she prepared beforehand (she laid some eggs) so she awakens but with stats reset while all the skills and other shit are maintained
