Fully soggy noodles are a bit gross. Like biting into the middle of a pumpkin pie when you were expecting the consistency of al dente pasta noodles (or somewhere between gum and brown rice).
It's not so bad with some buckwheat noodles or pasta, but it can get really gross with something like udon. Still a bit YMMV with taste, it's a bit like french fries, overcooked vs undercooked, crunchy vs soggy.
