The green color, I think, just to show it is "fresh" (because of the mint) or something. Sure it can be blue colored, but light green is more appealing for a food?
Personally, I don't like mint in general. Instead of feel refreshed or something, it just feels... weird. And it reminds me to toothpaste instead.

There is mint chocolate chip ice cream that's white, and frankly it's usually better. I know, I know, the food coloring itself doesn't really affect the flavor. I just feel that as a general trend the higher quality stuff doesn't feel the need to dress it up like that. It's the cheap, crappy stuff that goes for the bright green dyes.
