I started using mangadex recently and im confused if i mark a manga as completed will it show up in my list again if a new chapter is released? If not how would i know what has been updated and what i've already read?

First, if you list it as completed it will not shown on your follow latest update and this happend on dropped list too.

You just need to check it out by yourself / manually.
