I don't get why people are mad about these "EXTRA" chapters. They aren't supposed to be the main story. They give backstory into the characters. You don't care about it or not like it. Then just skip them. You won't miss anything. I personally like them since it makes these "plot device tools" have some character and makes their decisions and choices within the manga have more context.

Ex. Why would this random girl not report this guy to the guild? Why didn't she kill him or have her guard up after he bit her? If she is a scientist why didn't he just lock up this creature? He is stronger and can have the same effect.
