I believe they are a new character that’s introduced for this arc(?) since this chapter explains they have different shifts at the main cafe. I haven’t seen this character in previous chapters either.

If the author had had more foresight, a couple of more employees would have been randomly shown in the early chapters, even if without any dialogue, for future use. However, since this was supposed to be a very short manga originally, I guess the author never saw any use for such.
