I kinda relate to Mr. Smith in this chapter. My grandmother from my mother’s side’s family live in the mountain. We visited them when my great grandfather died. It was also a week long affair. I remember that literally all of the relatives who came brought at least 1 pig each. On the day when he was buried, there was a river of pig blood. I was kinda fascinated but terrified at the same time. The pigs had to be killed with driving a wooden stake through their heart so their screams were extremely loud. It was said that when the soul in heaven hears the pigs’ scream, he/she’ll be reassured that he was being honored by his/her family or something like that.

author did the homework, nice. the fact that mr smith wonder why theres no much blood actually confirm author understands it. by slicing the throat correctly, almost all the blood will be pumped out before the animal actually died, so the meat will be cleaner when they cut it after that.

and no, its not to make them suffer too, since you need to cut its flow of oxygen to the brain in the same stroke. so the brain goes into some kind of shock and confusion state(you cant think clearly what happening without oxygen in your brain) and thus making the heart pumped blood faster resulting in faster bleeding
