As for establishing an academy, Dias wouldn't have to be the instructor. His fame would be enough to attract specialists in each weapon discipline and they can be in charge of teaching. If you look at modern day universities and similar places, the head guy doesn't teach. His job would administrative rather than practical. Not that Dias would be particularly suited for that, but the impediment isn't his lack of fancy tactics and strategic understanding of the art of warfare. It's that Dias isn't going to be good at hobnobbing with the elites in fund raising and relationship building.

I think she could even be from religion, like holy maiden having some prophecy or something.
Noble-wife would have made the only sense when her house had basically dead male line and she was ordered by a King (get rid of her without killing - traitor family, etc), otherwise, nobody would want to live in some remote place which had nothing to offer. So far MC is noble in just a title, he has no people under him and so far no riches were discovered in the land.
Royalty is kind of unlikely, fellow knight seems more plausible.
One more possibility is a merchant's daughter. It would be a move to gain influence precisely because of the title.

18 for marriage is not entirely dumb. You would be surprised that even in medieval times, there were not many underage marriages. Of course, most of them were among the nobility, very rarely in common folk. Nobles had arranged marriages which sometimes were validated even younger than in 15 years. Which brings a point, he may be noble now, but his girl definitely isn't.

At least in whatever law the king seems to have. Who in that world would authorize it? Priest? King? Certainly not her parents that hide their existence. There has to be a relative or some higher-up authority to authorize these marriages, it hasn't happened in history as easy as you think.
