Sometimes princesses would be sheltered and hidden from society before their debut. Lowly street thugs would have very low chance of knowing who they are.

It wouldn't be that uncommon for the common folk to not know the face of their princess, more so if she hasn't had her debut. There's no printed press or tv in this setting.

Almost nobody would know what the royalty actually looked like at most they would know their names. The only reason people know today is because of photos and tv.

wrong, you should always go full chuuni so you can roll with whatever people say or only go like 10 or 20% so you don't say anything too embarrassing. The reason she cringed is because she only went half way and couldn't handle it when the guard repeated it back.

I doubt commoner/slum/ordinary kidnappers(those not part of some big underground gang) would know what the princess looks like, the only chances royalty would be seen by commoners are when they parade: before/after war, before/after marriage.
That is basically it. Even if they did go around town for shopping or something, they would stick to those big store for nobles in a district for nobles surrounded by escorts.
(above speculation is based on customs during medieval times)

Usually they pick targets based on their clothes so they probably though she was some noble but don't know yet. Assuming that they would just ask the noble ladies which family they are from to send ransom since said ladies are usually sheltered so if there is trouble they can only rely on their household(basically say "my >insert family name here< is rich and they would pay, so don't hurt me"
 
While you both everyone is technically correct. You're forgetting a very important thing. She had with her a platoon of guards to act as her escort.
Running off aside; a royal, be it from now to ancient times, would not be active unless debuted- especially in the mean street. They'd just have the help preform their tasks for them.

Sheltered youth, back in the day, were just prisoners in their own homes and would never be given the ability to leave outside of escapes.

People keep thinking these types of stories take place during Medieval times, that's incorrect. If you look at their technology level most are closer to being late Renaissance (minus guns/gunpowder).

It's too bad forced event is forced. But the story is stupid fun, so who cares.
