genuine advise: she's pretty easy to stagger so if your damage is high enough you can basically chain stun her by just breaking her limbs in sequence. fire paper can help. if you haven't put many points into your damage stats so far then you might also want to grind a bit to level those up. lvl 25 in your primary damage stat is more than sufficient in my experience, but even if you can't get it that high just having more damage makes a big difference in the fight. also playing super aggressively is the best strat in general, and that applies even more so to amelie.

how it'll probably go down though: just smash your head against her 20 times or so until you've learned all her moves
