Meh, you can try to bring up in-world reasons as to why it'd be impossible, but when dungeons already proved that you can create either creatures or resources (mithril) with mana, that idea went out of the window. The MC is a living-god of magic, if anyone should be able to do it, it'd be him.
That being said, being able to produce whatever resource he wants at any given time, would make the MC *too* OP at this point in the story. Even for an isekai-level mango, it'd be too silly.
