That was my initial thought, and there is the additional factor that it is unhealthy to eat apple seeds, but then I realized that the core piece was probably there only for presentation.

I've never been a huge candied apple fan. They look cool and all, and they're fun at fairs, but they don't IMO actually taste that great. I'd rather have a pastry-type thing like pie or turnovers or strudel. Or crumble. Or I've had a recipe that has like slices of apple in a soft spongy cake; I think it had some brown sugar sprinkled on top that caramelized.
