Technical Note: You don't have to suck the air out of the bag with a straw, just put the unsealed bag in the water up to the seal, and then seal it, the surrounding water will get the air out far better than you can.

Also it's odd that of all the odd kitchen gadget on hand, the one she doesn't have is an immersion circulator
