@charasander to add on to what noir 4241 said, the ike-jime method is theoretically a more humane method for processing the fish compared to some where you either club the fish, let it suffocate by tossing it into an ice cooler, or just let it bleed out without braindeath

Step 1: drive a spike into the fish's brain. (causing instant brain death)
Step 2: Start the exsanguination by severing the spine under the gills and tail
Step 3: destroy the spinal cord using a wire ( this one's kind of optional )
Step 4: dump fish into ice bath to finish bleeding and bring muscles to a full stop.
Step 5: do the usual

Makes for a firmer, tastier, and longer lasting fish
