Carpaccio is just Italian name for Sashimi, thin sliced meat or fish served raw. The only difference is just how it served. Sashimi usually use soy sauce as the flavoring. While Carpaccio served as appetizer food.

Marinated fish is just raw sliced fish marinated with spices
